The Caucasus is a large historical land located on the border of Europe and Asia. The region mixes not only the influences of Eastern and Western cultures, but also about seventy ethnic groups inhabiting this diverse area. Caucasian culinary art is not a monolith, but a collection of many traditions and flavors. Ingredients used for cooking are the common denominator of the cuisine of individual regions. Due to the fact that the Caucasus is mainly inhabited by pastoral communities, the products are primarily of animal origin – dairy products, meat and flour dishes, e.g. many kinds of pies and rolls.
