Charczo is a spicy and filling vegetable/meat soup, characteristic for the Caucasian cuisine. This thick dish resembles stew with pieces of beef or fish. Nuts are an important ingredient of charczo as they are used in many traditional Georgian dishes. The soup occurs in many variations, it can be made with tomatoes, pepper, garlic, rice or coriander. The mix of spices called khmeli-suneli is a characteristic and exceptional ingredient of charczo. The soup is quite often fatty and spicy and for that reason it tastes best with a piece of bread.
