Chocolate pralines are commonly known – they have a hard shell and soft chocolate filling – and were invented by the Belgian confectioner master Jean Neuhaus II in 1912. The first pralines were filled with vanilla, nuts and contrineau liqueur fillings. Today praline manufacturers compete in terms of the richness of flavors and shapes, each chocolate resembles a small work of art. When you buy pralines pay attention to the shelf-life (the shorter the better) and the smell - it should be soft and sweet. Good pralines should have a crunchy, thin shell, coating soft, preferably semi-liquid filling.
