Horiatiki, i.e. a rustic salad, is a popular dish in Greek cuisine. The key ingredient of the salad is feta cheese, i.e. traditional Balkan cheese made of sheep and goat milk, mixed in the right proportions. In the original version of a Greek salad, fragrant, crumbly cheese was served in the form of a large slice, whereas today feta is more often diced. Among other ingredients it is a must to mention Greek olives, seasonal vegetables, ripened in a sunny Mediterranean climate: deeply red tomatoes, peppers, cucumbers and onions. Horiatiki tastes best when it is served with fresh bread, sprinkled with good quality olive oil. It is also worth seasoning the salad season with garlic and herbs.
