T-bone is the most distinctive type of beef steak. It is prepared from a piece of meat, which consists of a portion of sirloin and roast beef separated by a fragment of the spine bone, which takes the shape of the letter T (hence the name – T-bone). Due to the fact that the steak consists of two types of meat, its preparation is quite difficult. Roast beef requires much longer grilling time than sirloin, which is why every T-bone must be seasoned. In the maturing process the meat tenderizes and thanks to that the time of preparing roast beef is significantly reduced, and the chef does not risk serving underdone meat.
