Delicious seasonal fruits and vegetables ripen in summer and autumn, then we may enjoy them for several weeks. It is, however, worth preserving some of these exceptional flavors and aromas and enjoy them even during winter. Homemade preserves such as jams, sauces, purées, compotes, vegetables marinated in vinegar or oil are the examples of such winter delicacies. If prepared properly these heat-treated tasty products can be stored in jars even for several years. Preserves made of tomatoes, cucumbers, mushrooms, pumpkin or fruit will help us replenish vitamin deficiencies during the cold months.
