Mexican salsa pico de gallo (literally: the beak of a rooster) consists mainly of fresh tomatoes, onions and green hot peppers. Chopped vegetables are served with aromatic coriander, salt and lime juice. Salsa is an addition to tortilla or to almost any main meat or fish dish. It can be prepared in a basalt mortar called molcajete that has a rough surface facilitating the grinding of ingredients and – apparently – gives salsa a unique taste.
