Tomatoes and cucumbers
Late spring and summer is the time when our diet should include early vegetables. Apart from the fact that they contain lots of vitamins and nutrients that are beneficial for our body, such vegetables can be used to prepare many dishes. They are perfect ingredients for salads, home-made preserves, sandwiches or curd cheese. Tomatoes and cucumbers are equally associated with the summer and the time for fresh vegetables, nevertheless, they should not be combined in the same meal. Cucumber contains ascorbinase – enzyme that oxidizes vitamin C, in which tomatoes abound. It is therefore better to consume these two vegetables separately.
