Traditional Mexican fajita
Fajita is a dish of Mexican cuisine prepared from grilled meat served in a wheat or corn tortilla. Traditionally, the basic ingredient of this dish was a beef diaphragm, called a hoop by butchers, in a diminutive form just called "fajita". Today fajita is also prepared from pork or poultry meat, from shrimps and without meat in a vegetarian version. It is served on a hot cast iron pan with vegetable ingredients and sauces, whereas tortillas are placed on a separate plate. Then the consumer composes the dish by himself, putting the right amount of meat and selected additives onto the tortilla. Fajita should be eaten with fingers, cutlery is used only to put meat and sauces on a tortilla.
