Christmas Eve borscht with small dumplings
Lenten borsch with small dumplings is one of the most popular Christmas Eve dishes. Intensely red clear soup, prepared with beetroot sourdough, is a traditional dish eaten in many countries of Central and Eastern Europe. In general, sour-spicy borscht is served in the company of small round dumplings, which due to their shape are called uszka (Polish: ears). They are stuffed with forest mushrooms, onion, cabbage and spices. Such a meal is most often eaten on 24 December, at the beginning of Christmas Eve dinner.
