Most of us associate grilling primarily with the preparation of meat, but roasting on a barbecue grill is also a great technique for preparing vegetarian dishes. Vegetables, such as peppers, potatoes, sweetcorn, zucchini, eggplant, mushrooms, as well as some hard cheeses - sheep halloumi cheese or soy tofu – are perfect for grilling. Properly seasoned compositions of vegetables and cheese will provide a healthy and tasty alternative to meat dishes,whereas for dessert you can also serve grilled fruit. The best will be bananas, mangoes and pineapples, which contain relatively little water.
