Late summer and autumn is the traditional harvest season in the areas with a temperate climate. Grapes, pumpkins and root vegetables are among the edible plants that are most commonly associated with this time of year. It is wise to use some crops to prepare preserves in order to enjoy the flavor of fruit and vegetables in jams, puree, liqueurs or vinegar marinade. Some fruits and vegetables, such as apples, potatoes and other root crops can be stored for several months without prior heat treatment. Other edible plants should be frozen or dried to preserve them.
