In the past preparing stocks for the winter included appropriate preservation of fruits and vegetables so that they could be used even after many weeks. Due to the development of mass production of food, domestic preserving of stocks has been forgotten, whereas homemade products have been replaced by cheap and widely available finished products. Recently, however, we appreciate the value of self-prepared meals and preserves more and more, so frying jams and pickling vegetables come back into favor, recipes for home-canned food can be found not only in old cookbooks, but also in magazines for modern men and women.
