Česneková polévka, i.e. garlic soup, served with toasts and cheese, is a traditional dish of the Czech people. The dish is prepared on the basis of vegetable-meat broth, with grated potatoes and quite a lot of garlic. The soup is served with a whisked egg and sprinkled with yellow cheese. Crunchy pieces of bread that are diced and slightly roasted – called croutons – are a traditional ingredient of Czech soups. Garlic soup – due to the abundance of aromatic ingredients – can be prepared in a vegetarian version, based of vegetable broth. Česneková polévka has some warming qualities and for that reason it tastes best in winter.
